Frosted Grapes – with Domino Light Stevia and Sugar Blend

Over the past year my family has been eliminating aspartame from our diet due to the health risks associated with it. But, at the same time, we’re trying to eat less sugar. Domino invited me to create something tasty with new Domino Light. Summer is my favorite time for fresh fruit — so I decided to make a sweet treat with one of my go-to snacks: grapes.

I wanted to try a recipe that would really test the flexibility of Domino Light. What better way than candy? Or…something like it. I admit — it didn’t turn out quite as I’d planned. I’m not sure if it was the summer heat or the stevia in this mix – but I didn’t quite get what I was aiming for. However, I ended up with something different…and still delicious.

My intention was to bring the Domino Light to the hard crack stage at 300°. Even heating it on medium – the mixture continued to froth up and boil over. It also caramelized much quicker than pure sugar. So I decided to adjust and try it at the 250° firm ball stage.

After removing the sugar/water syrup from the heat I dipped the grapes one at a time and then rolled them in the granulated Domino Light. Then, using another skewer, slid them off into a bowl. You can place them on wax paper or even dip them with a lollipop stick and leave them attached to eat one at a time.

You can eat them right away if you want a soft, chewy treat. Or, if you’d rather a crunchy, crumble texture — just let them sit for a few minutes until they harden up.

Ingredients
  • 1 1/2 cup Domino Light
  • 1 cup water
  • Green or Red Grapes
Instructions
  1. Place 1 cup Domino Light and 1 cup water in a sauce pan
  2. Set heat to low until sugar mix has melted
  3. Pour remaining 1/2 cup Domino sugar in a bowl and set aside
  4. Turn heat up to medium and bring to a boil
  5. Once boiling, place candy thermometer and turn up to medium high
  6. Continue to boil until temperature reached hard ball stage (250°F – 265°F)
  7. Remove syrup from heat
  8. place grapes on wooden skewer, toothpick or lollipop stick and dip into syrup. Rolling on edge to allow excess to drip off.
  9. Roll syrup covered grape in granular Domino Light you set aside in the bowl
  10. Place in a dish or set on wax paper
  11. Eat right away for a chewy texture or let sit for a harder texture

 

I’ve also started using Domino Light in my morning coffee, cereal and other foods I need to sweeten. It offers me half the sugar and with a great, natural sugar flavor. There’s no bitter after taste and no harmful chemicals like aspartame. You can also bake with it, make sauces and more.
